4 LB Whole Fish- Salmon, Red Snapper or Branzino

8 Tablespoons Olive Oil

2 Tablespoons Santorini Mix

2 Tablespoons Geramin La Brie’s Brigade Seasoning

1 Tablespoon Salt

For the Sauce

1/2 Cup Lemon Juice

1 Cup White Wine

1 Tablespoon Santorini Mix

1 Tablespoon Worcestershire sauce

1 Tablespoon Olive Oil

1/2 Minced Onion

1 tablespoon diluted in 3-4 TB of water All purpose flour

For garnishing Italian Parsley
Directions
Wash and prep the whole fish in salt and all-purpose flour-(best way to take the fishy smell away.
Rub the olive oil, Santorini mix and the Brigade blend and salt and pan fry the whole fish in an oven-ready skillet. For about 3 minutes on each side.- after done – throw away the remaining drippings and place into oven at 375 degrees covering it in foil for about 15 minutes.
For the sauce-In the meanwhile sauté the onion in a pan and add the above and add the all-purpose to thicken – Pour over the fish and garnish with fresh parsley. Serve with salad in oil and vinegar.- simple as that!
